Holiday Morning Crockpot Breakfast Casserole

INGREDIENTS
  • 6 eggs
  • 6 egg whites
  • 1/2 cup almond milk
  • 1/2 tsp. garlic powder
  • 1 tsp. salt & pepper
  • 1 head cauliflower shredded
  • 1/2 small yellow onion chopped
  • 3 slices turkey bacon pre-cooked and chopped
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 3/4 cup low fat shredded cheddar cheese

 

INSTRUCTIONS
  1. Spray slow cooker with cooking spray
  2. Evenly place 1/3 of the shredded cauliflower in the bottom of the slow cooker, & top with 1/3 of the onion
  3. Season with salt & pepper, top with 1 slice of chopped turkey bacon and a third of the cheese
  4. Repeat the layers two more times
  5. Pour the egg mixture over the layers in the slow cooker
  6. Cook on low for 5-7 hours, or until eggs are set and the top is browned
